Also called the cross cut shank, this cut is a thick slice of richly flavored meat with a central marrow bone. The key is to cook low and slow – braised, roasted or in the slow cooker. This cut is also perfect for soups and stews. Traditional osso buco is made with veal shank braised with vegetables, white wine and broth, and we think the beef equivalent is quite delicious!

Osso Buco comes in multiple sizes, with different meat-to-bone ratios. Each size is perfect for different applications:

  • Large cuts range from 1.25-1.75 lbs and have more meat compared to bone, more like a small roast. 
  • Medium cuts range from 0.75-1.25 lbs.
  • Small cuts range from 0.5-0.75 lbs and have less meat and more bone proportionally - great for small meals or broth rich in marrow and other nutrients from the bone.

All meat is sold frozen.
