Smackdown Salmon is a Port Townsend based small family business owned and operated by wife and husband team Lisa Hoffmann and Jay Simerka. Lisa, who was born in Alaska, comes from a family of fishermen and is the business operator of Smackdown Salmon. Jay has been fishing in Southeast Alaska for nearly 30 years, where he earned the nickname Smackdown Simerka. Recently Jay’s son Chase joined the team, fishing and processing the salmon. Their boat, the F/V Sydney Jane, is named after their daughter.
Quality and sustainability are of utmost importance to the crew at Smackdown. First, they pressure bleed the fish - a labor intensive process that results in the highest quality end product. Then all of their products are carefully processed by hand, from dressing, to filleting to packaging. For the final vacuum sealing and canning, Smackdown works with a small family run cannery and processor in Alaska where even the canned salmon is packaged by hand, one can at a time.
