Chorizo Tacos with Pineapple Salsa (Recipe)

The name of this recipe speaks for itself.

Chorizo. Tacos. Pineapple. Salsa

It tastes as good as it sounds and is gorgeous on your plate, to boot.

Like cavorting in a splash of spicy sunshine.

The sweet and spice of the Pineapple Salsa perfectly compliment the complex flavors of mouthwatering One Straw Chorizo.

And since it’s One Straw pork, you know you can feel good about what’s on your plate.

Because our pork is always clean, safe, ethically raised – and SO delicious.

This meal tastes like a dream vacation in the tropics, but is oh-so-easy.

Once you have the vivacious Pineapple Salsa made, putting the rest of the meal together is a breeze.

The salsa is best the day it’s made, but can be stored in the fridge for a couple of days.

And I happen to know that any leftover salsa is delicious on tortilla chips.

I suggest making the salsa first, allowing the flavors to meld as you prepare the chorizo and tortillas.

If you help yourself to a few bites as an appetizer, who’s to know? Or blame you. Haha.

Chorizo Tacos with Pineapple Salsa

Ingredients

1 lb One Straw Chorizo Sausage

1 tsp oil

1 recipe Pineapple Salsa (below)

Optional toppings – additional lime juice, sour cream

Corn tortillas

Directions

Prepare the Pineapple Salsa and set aside.

Heat a pan over medium heat.

Swirl in the oil, then add the sausage.

Stir the chorizo around with a wooden spoon to break it up as it cooks.

Cook through (to 158 degrees).

Heat the tortillas, as directed on the package.

To serve, spoon cooked chorizo and pineapple salsa onto heated tortillas.

Enjoy!

Pineapple Salsa

Ingredients

1 20oz can pineapple chunks (about 2 cups)

4 tsp jalapeno, de-seeded

½ C red onion

¼ C cilantro

2 T lime juice

½ tsp kosher salt

6 grinds pepper

Directions

Finely dice the ingredients, removing the stems from the cilantro and the seeds from the jalapeno.

Mix all together in a bowl.

Taste and adjust seasonings, as desired.

Note – one batch of Pineapple Salsa can compliment up to 2 lbs of cooked chorizo, depending on your preferred salsa:chorizo ratio

All the time knowing it’s going to come out how Charlie Brown heard his teacher – “wah wah wah”. 😄 Luckily, I mentioned my problem to Farmer Martin and he boiled it down to TWO WORDS. Fresh. Feed. Ha! Why couldn’t I think of that? 🤷‍♀️ At this moment of the year, Fresh Feed means the most gorgeous grass on God’s green earth. 🎥 So, if a picture’s worth a thousand words, I decided to spare you the 5-paragraph essay and bring you a 48 second video instead. Farmhand Grace was happy to hop on the tractor with her farmer-daddy to make the trek out to the pasture and help show you around. I’m not making promises about the video quality. 🎬 I didn’t plan out what I should say (I would have managed to turn it into an unendurable 5-paragraph essay). And fair warning if you get motion sickness, there’s a moment at the beginning where I spun the camera a little fast because I had a premonition of approaching danger… I’m not going to spoil it by telling you what it was - suffice it to say my instincts were correct.
