The fishing season for lingcod is super short, which means you want to snap it up here because you can't often find it in the stores.
With a smooth, buttery texture and large flakes, it cooperates in the pan and doesn't dry out easily.
Some say it cooks up somewhere between cod and halibut, but we say it deserves to be acknowledged in its own right.
Excellent pan-fried on its own with a squeeze of lemon, it also plays well with a variety of seasonings or in fish tacos.

Sustainably harvested by our friends Kat and Luke of Katfish Salmon Co, a small, family-operated Olympic Peninsula based fishery.
Kat and Luke haul each fish up one-by-one and quickly bleed, dress and ice them onboard for superior freshness and quality.
