This less-known triangular cut from the sirloin is sure to become your new favorite! Lean but containing just the right amount of marbling, it is phenomenal off the grill or in the broiler or oven. Season with garlic, salt and pepper, or your favorite dry rub, and slice it against the grain like you would a flank or skirt steak.
