Skirt steak is a long, thin cut of meat with incredible flavor and tenderness when cooked correctly.

It’s the cut of choice for fajitas, and is perfect for thin slicing for steak salads, sandwiches and stir-fries. 

The skirt is best cooked hot and fast to sear the outside without overcooking the inside - we aim for medium rare or medium at the most.

Then slice thinly against the grain for maximum tenderness. Yum!
