The hanging tender is very flavorful and can be one of the most tender cuts of beef if cooked quickly to rare or medium rare. This cut was also called the “Butcher’s Steak” because the butcher would often keep it for his own dinner rather than sell it! Cook quickly and slice against the grain for maximum tenderness.
