Note: Wondering what "Uncured" means on the label? It simply means our product does not contain synthetic nitrate or nitrite - it's a labeling technicality. USDA regulations dictate that "Cured" products must contain synthetic nitrates or nitrites. Since ours only include naturally occurring nitrates from celery powder and sea salt, we must label it as uncured. It has still been seasoned, smoked and fully cooked to perfection.
